What Our Students Say
I had been experimenting with different ways to improve my ramen tare, but the more I tried, the more confused I became. This lesson made everything click. I finally understood what I had been missing, and now I feel like I can move forward without second-guessing myself.
Everything was explained so clearly—the temperatures, the key points to watch for, and how to judge each stage. One of my regular customers even told me that my ramen had changed. Amazing. I’m using exactly the same ingredients as before, but the result is completely different. I was honestly moved to tears.
It made me realize just how much I had been relying on instinct when making ramen. I’m really glad I watched the videos.
I’ve added more ideas to my repertoire. Now I can create even more limited-edition ramen!
Until now, I’d been adding ingredients simply because I thought they might make the ramen taste better, without really thinking about why. Now I understand that it’s all about balance. And it really does taste better now! (^^)/
Instructor Profile
Hideki Futemma
I have owned and operated several restaurants, including ramen shops, while also spending many years teaching the techniques of ramen making.
I have worked with students from Japan and from all over the world—Asia, Europe, the Americas, Africa, and beyond—who have traveled to Japan with a serious passion for learning authentic Japanese ramen. I have always done my best to match that passion and commitment.
Over the years, I have developed more ramen dishes than I can count—ramen created to succeed in real professional kitchens.
Some of the people I have taught are now thriving in the industry, and some have even told me that ramen changed their lives.
Ramen has that kind of power.
It has the ability to draw people in.
A single bowl can bring a smile to someone’s face and make them feel genuinely happy.
I believe ramen culture will continue to spread even further around the world.
I hope this lab can become a trusted place for those who want to learn, grow, and deepen their understanding of ramen.
Develop a solid understanding of the theory, rather than relying on intuition alone.

When teaching ramen making, one of the most important things is reproducibility.
For those living outside Japan in particular, the ingredients and seasonings available in Japan may not always be available locally.
Food cultures and standards of taste also vary from one place to another. Soy sauce may not be readily available, pork may not be eaten, or lighter flavors may be preferred. When working with people whose culinary norms are very different, the challenge is to create ramen that they will genuinely find delicious.
No matter how different the environment may be, however, the foundation remains the same: bringing out the very best in each ingredient.
From there, it is a matter of how to build and express balance and individuality in a bowl of ramen.
These ideas and principles are woven into each of the lessons in this lab.
Whether ramen is your passion or part of a bigger goal, I would be delighted if you make use of this lab to develop your skills and take your ramen further.
The Importance of Learning the Fundamentals
The Skills to Create Your Own Exceptional Bowl of Ramen
At this lab, the goal is not simply to reproduce recipes, but to understand what makes ramen delicious—to explore the “why” behind each recipe.
Through our video courses, you can systematically learn authentic ramen-making techniques, from the fundamentals to more advanced applications.
Rather than jumping straight into advanced techniques, we encourage you to build a solid foundation first and gradually develop your skills step by step.
By gaining a clear understanding of the basic principles, even when you encounter a bowl of ramen that seems complex at first, you will be better able to understand how it is constructed.
Instead of relying on intuition alone, develop the ability to think through each element and create the bowl of ramen you truly want to make.
We hope what you learn here will give you the knowledge and skills to create your own ideal bowl of ramen.
